Pressed off gently into old oak French and Hungarian Barrels to age on whole lees for 4 years to add that creamy rich body roundness. Bottle fermented and riddled for 1 year traditional method then late disgorged.
This dry Amontillado acquires a genuine, rich and nutty flavour through years of ageing. Amber in colour, with hazelnut aromas on the nose. Light, soft and round on the palate, with a long aftertaste.

"I think" Manzanilla En Rama is, besides a humble homage to Charles Darwin as a symbol of the triumph of reason, a true and untamed manzanilla. Bottled after barely the slightest filtration process, it retains the intense golden color and pungent character it exhibits straight from the butts where it ages under flor for about four and a half years.
