Ministry of Clouds GG (2025)

The Ministry of Clouds GG 2025 is a dry, highly aromatic white from the Adelaide Hills, built from gewürztraminer and pinot gris. Perfume does the talking here, with plenty of texture behind it and no sweetness to soften the edges.
Lychee, musk stick and rose petal lift out of the glass first, followed by nashi pear, pink grapefruit and a twist of pickled ginger. There is a faint smokiness underneath the fruit that keeps the aromatics from tipping into anything cloying.
Mid-weight across the palate rather than heavy, the 2025 GG carries a fine sandy grip from skin contact that gives the wine shape and grain. Acidity runs straight through the middle, the fruit turns more citrus than tropical towards the back, and the finish is dry, spicy and long.
Aromatic whites of this build were made for spice and sweet-savoury cooking. Pour it with Thai green curry, banh mi, salt and pepper squid, pork belly with apple, or a Vietnamese herb salad with plenty of chilli and lime. It also holds up well against washed-rind cheese, where softer whites tend to give in.
Drink the Adelaide Hills GG from now through to around 2029. It is immediately appealing in its first year, but the acid line and phenolic grip suggest a few years in the cellar will let the spice and citrus settle into something more savoury.
