Paul Chavy Bourgogne Pinot Noir (2023)

The Paul Chavy Bourgogne Pinot Noir 2023 is a light-to-medium-bodied red Burgundy built on fragrance and lift rather than power. Made from fully de-stemmed Pinot Noir and matured for around eleven months in seasoned rather than new oak, it keeps the variety's red-fruited clarity front and centre.
Aromatically, this Bourgogne Pinot Noir leads with morello cherry, raspberry and a little crushed strawberry, with rose petal, dried thyme and a faint earthy undertone sitting behind the fruit. The palate follows the nose closely: juicy red berries, a touch of blood orange, and just enough savoury spice to stop it reading as simply sweet-fruited.
Structurally the wine is finely drawn, with fine-grained tannins that brush rather than grip and acidity that keeps the middle bright. The generous, warm 2023 growing season in Burgundy shows in the ripeness and immediate approachability of the fruit, while a long maceration in stainless steel and time in older barrels give quiet texture through a clean, moderately long finish.
Pour it with roast duck breast, mushroom risotto, coq au vin, or a plate of charcuterie and washed-rind cheese. Half an hour in the decanter and a serve at around 15 degrees will do it favours; heavy chargrilled meats will overwhelm it.
Drink now through to 2029, with the fruit at its most expressive over the next three years.
