Red Wine

This Shiraz has tastes of sweet dark oak with glowering fruit. The palate's more slender and lithe than that bouquet; the illusion of sweetness intensifies, so pure and intense is its fruit.

A dark cherry red, the Chrismont Merlot 2005 exhibits cool-climate developed red fruit characters: fragrances of red currants interplay with suggestions of spice and leather; the fresh, intense character of the palate with layers of plum, hints of earthiness and mint; and supple, dense and assertive tannins produce a balanced and dry finish. Cellar to 2013.

We have shown this to many and we love the responses - this wine is savoury, slightly frizzante and an absolute perfect match to sweet and savoury dishes or snacks.

Medium dark red colour with lifted dark berry and spice aromas, showing hints of chocolate. A supple palate with cherry and dark plum characters, finishing gently with very soft and fine tannins and creamy vanilla nuances.

2009 was another great vintage for Polin & Polin's new Convicts & Catholics Shiraz.

This is a contrasting style of Shiraz with a medium bodied and fruit driven palate while retaining the unique Hunter Shiraz character.

 A south paw of a Cabernet. The nose is busted up into equal parts of cooking chocolate, coffee grounds with quick jabs of earth and licorice.  The mouth is swollen with huge ripened black fruits and an even tariness that rolls out flavoursome wallops around the mid palate. Leading to a deceptively smooth sucker punch of a finish that goes on and on until the stadium is empty.

 Merlot being considered the glass jawed palooka of the grape world. Well folks we have a heavy weight champ on our hands here and it sure can stick and move. What a jammy nose full of mullberry, kirsch and herbal notes. The full, rich mouthfeel will have you lying flat on your back against the canvas like you've taken a dive. The tannic/acid structure goes pound for pound with your palate.

 A great nose comes out punching with lefts and rights of plum and blackberry. Light jabs of asian spice, licorice and fruitcake tussle the bouquet but not to rough it up. The palate weighs in with a smooth yet unadulterated mouthfeel of perfectly ripe fruit and Barossan earth are present yet feint to the overall pleasing power off the supple tannic balance and knockdown acid structure.
