Bollinger is unique and there is good reason for it's following.
The wine has a quite a deep colour with an intense nose of savoury bready notes and a touch of lifted acidity. The palate is very full flavoured with great intensity and almost austere savouriness. Absolutely delicious.
Winemaking Only the Cuvee (first-pressing) is used. First fermentation is done in steel tanks. Following second fermentation and 3 years of ageing, a light dose of 6-9 grams is added. After disgorgement the wine is rested in Bollinger’s cellars for three months prior to shipping.
